Directions

MAKING
1)In a bowl, beat together margarine and sugar until light and fluffy.
2)Add eggs and orange rind and mix.
3)Add flour and salt and mix thoroughly. Then, add nuts.
4)Take a greased baking sheet and drop spoonsful of batter 4-inches apart.
5)Spread mixture as thin as possible with a spatula.
6)Bake at 325 degrees for 10 to 12 minutes.
7)Remove from oven and let stand 1 minute.
8)Loosen cookies from baking sheet with a broad spatula.
9)Now, quickly roll warm cookies one at a time, around the handle of a wooden spoon.
10)Put them on rack and cool.

SERVING
11)Serve the good luck roll ups on special occasions.

TIPS
If cookies cool and cannot be rolled easily, return them to warm oven for a few minutes.
