Ingredients
1 cup butter, softened
3/4 cup honey
1 egg
2 tablespoons unsweetened frozen orange juice concentrate
1 1/2 teaspoons vanilla extract
2 3/4 cups whole wheat pastry flour
1 teaspoon baking powder
Directions
In a large bowl., beat together butter and honey.
Beat in egg, orange juice concentrate, and vanilla.
Mix in flour and baking powder, blending well.
Form into a ball, wrap with plastic wrap, and chill for about 2 hours, or until firm enough to roll.
Preheat oven to 400 °F.
Divide dough in half.
Roll out 1 half on a lightly floured surface to a Mi-inch thickness.
Work quickly; the dough tends to soften.
Cut with the top of a glass or a cookie cutter into 2!/2-inch rounds, and place on un-greased baking sheets.
Repeat procedure with the other half.
Bake on middle shelf of oven for 8 to 10 minutes, or until lightly browned.
Cool on wire racks.
