Good Luck Peas Recipe
Ingredients
| Black-Eyed Peas- 2 cups, cooked | ||
| Carrots | 2 Cup (16 tbs), shredded | |
| Kale | 1 Cup (16 tbs), shredded | |
| Leeks | 1 Cup (16 tbs), minced | |
| Lemon juice | 2 Tablespoon | |
| Red-Wine Vinegar- 2 tablespoons | ||
| Olive oil | 2 Tablespoon | |
| Dried basil | 1 Teaspoon | |
| Dried sage | 1/2 Teaspoon | |
| Dry mustard | 1/4 Teaspoon | |
Directions
MAKING
1) In a large bowl, combine together the peas, carrots, kale, and leeks.
2) In a cup, mix together the lemon juice, vinegar, oil, basil, sage, and mustard.
3) Pour vinegar mixture over the vegetables.
4) Toss well to combine.
SERVING
5) In the salad bowl, arrange the kale on the base and vegetables on top,
