Ingredients

 2 cups cooked, cold brown rice
 1/2 lb sliced mushrooms, lightly sauteed
 1/2 cup diced green pepper, lightly sauteed
 Water chestnuts1 Cup (16 tbs), sliced
 Pimientos3 , sliced
 Parsley1/4 Cup (16 tbs), chopped
 1 /4 cup green onions chopped
 Vegetable oil1/2 Cup (16 tbs)
 Sea salt1 /2 Teaspoon
 1 Tbsp Tarmari soy sauce
 Wine vinegar3 Tablespoon
 Brown mustard2 Teaspoon

Directions

Combine cooked brown rice, mushrooms, green pepper, water chestnuts, pimientos, parsley, and green onions in a salad bowl.
Stir together vegetable oil, sea salt, soy sauce, wine vinegar, and mustard.
Pour dressing over rice and toss well.
