Golden Tuna Pie Recipe
Ingredients
2 cans (1 pound each) lima beans, drained
2 cans (about 7 ounces each) tuna, drained and flaked
1 can (1 pound) stewed tomatoes
1 tablespoon sugar
1/2 teaspoon Italian seasoning
1 small package refrigerated plain or buttermilk biscuits
2 tablespoons butter or margarine, melted
1/4 cup cornmeal
Directions
1 Mix lima beans and tuna with tomatoes, sugar, and Italian seasoning in a 6-cup baking dish.
2 Bake in hot oven (425°) 30 minutes, or until bubbly.
3 While tuna mixture bakes, separate the 6 biscuits; cut a hole in center of each with a doughnut cutter.
Roll both large and small circles in melted butter or margarine in a pie plate, then in corn meal to coat well.
Arrange on top of tuna mixture.
4 Bake for 15 minutes longer, or until biscuits are crusty golden.
