Golden Squash Bake Recipe
Ingredients
6 cups cut up pared Hubbard squash
2 tablespoons butter or margarine
1 cup dairy sour cream
1/2 cup finely chopped onion
1 teaspoon salt
1/4 teaspoon pepper
Directions
Place squash in saucepan with small amount of boiling salted water (1/2 teaspoon salt to 1 cup water).
Cover tightly and cook until tender, about 15 minutes.
Drain squash thoroughly.
Mash squash; stir in remaining ingredients.
Mound mixture into ungreased 1-quart casserole.
Cover and refrigerate.
