Golden Mediterranean Pilaf Recipe
Ingredients
1/4 cup chopped onion 50 mL
1 cup regular uncooked rice 250 mL
1/4 cup salad or olive oil 50 mL
1 tsp saffron or turmeric 5 mL
1/2 tsp garlic powder 2 mL
2 1/2 cups chicken broth or water and 3 bouillon cubes 625 mL
1/2 cup grated Parmesan cheese 125 mL
Salt, pepper
Directions
Saute onion and rice in Hot oil, stirring constantly until rice is a light golden color and the oil absorbed.
Add saffron, garlic and broth.
Stir well, then cover and let cook gently until rice is tender and all broth absorbed.
If still wet, although tender, uncover and stir and heat until liquid evaporates.
Add the cheese and taste for seasonings.
