Golden Mashed Potatoes With Horseradish Recipe

Ingredients

 
1 1/2 pounds yellow fleshed potatoes, peeled and cubed
 
1 1/2 cups low fat small curd cottage cheese
 
1 cup 1 3/4 low fat milk, scalded
 
4 scallions, minced
 
1 tablespoon prepared horseradish
 
1/2 teaspoon ground black pepper
 
Pinch of grated nutmeg

Directions

Place the potatoes in a 3 quart saucepan.
Add cold water to cover.
Bring to a boil over high heat.
Reduce the heat to medium and cook for 20 minutes, or until the potatoes are quite soft.
Drain well and return to the pan or place in a large bowl.
Mash the potatoes thoroughly.
While the potatoes are cooking, place the cottage cheese in a food processor and process for 2 minutes, or until smooth.
Using a heavy whisk or a potato masher, gradually incorporate the milk into the potatoes.
Add the cottage cheese, scallions, horseradish, pepper, and nutmeg.
