Golden Broiled Scallops Recipe

1 1/4 pounds bay scallops (or sea scallops, cut into 1-inch pieces)
 
1/4 cup lemon juice
 
2 tablespoons plus 2 teaspoons margarine, melted
 
1/2 teaspoon each paprika and pepper
 
1/4 cup tartar sauce
 
Garnish:
 
4 each lemon wedges and parsley sprigs

Directions

Preheat broiler.
In each of 4 shallow individual flameproof casseroles arrange 5 ounces scallops in a single layer; pour 1 tablespoon lemon juice and 1/4 of the margarine over each portion and toss to coat.
Sprinkle evenly with seasonings and broil until golden, about 2 minutes.
Serve with tartar sauce on the side and garnish with lemon and parsley.
