Golden Prune Scones Recipe
Ingredients
2 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
6 tablespoons butter or margarine
2 eggs
3/4 cup pitted prunes, chopped
2/3 cup milk
Directions
1. Preheat oven to 425°F. Grease 8" by 8" baking pan.
2. In medium-sized bowl, mix flour, sugar, baking powder, and salt. With pastry blender or 2 knives used scissors fashion, cut in butter or margarine until mixture resembles coarse crumbs. In small bowl, beat eggs. Reserve 1 tablespoon beaten egg for brushing on batter later. Stir prunes and milk into remaining beaten eggs. Stir egg mixture into flour mixture just until ingredients are blended.
3. Spoon prune mixture into prepared pan; brush top with reserved beaten egg. Bake 15 minutes or until golden. Cool in pan on wire rack 10 minutes.
4. Remove from pan; cut in half, then cut each half crosswise into thirds to make 6 rectangles. Cut each rectangle diagonally in half to make 12 triangles.
