Golden Poached Pears Recipe
|Ripe bartlett pears||6 (Fresh)|
|Fresh lemon juice||1 Tablespoon|
|Canned apricot nectar||24 Ounce (2 Cans, 12 Ounce Each)|
|Sugar||1⁄2 Cup (8 tbs)|
|Freshly grated lemon peel||1 Teaspoon|
|Fresh lemon juice||1⁄4 Cup (4 tbs)|
|Sherry||1⁄2 Cup (8 tbs)|
|Fresh mint sprigs||6 (For Garnish)|

Sprinkle them with 1 tablespoon lemon juice to prevent discoloration.
Combine apricot nectar, sugar, lemon peel and lemon juice in a deep saucepan over medium-high heat.
Bring to a boil, reduce heat and simmer 5 minutes.
Cook pears in simmering syrup over low heat, basting and turning them occasionally to cook evenly.
Cook 20 to 25 minutes, or until just tender.
Remove pears and set aside.
Continue simmering sauce until reduced by half.
Pour sauce over pears, cover and refrigerate.
Place each pear in a chilled dessert dish and spoon syrup over each.
Garnish with fresh mint when available.
