Golden Pear Cake Recipe
Ingredients
3/4 cup unbleached flour
1/2 cup whole wheat flour
1/2 cup light brown sugar
3/4 teaspoon baking soda
1/8 teaspoon ground cardamom or nutmeg
1/2 cup plain nonfat yogurt
2 egg whites
2 cups chopped peeled fresh pears (about 2 1/2 medium)
1/4 cup golden raisins
TOPPING
1 tablespoon light brown sugar
1 tablespoon toasted wheat germ
Directions
1. To make the topping, combine the light brown sugar and wheat germ in a small bowl. Set aside.
2. In a large bowl, combine the flours, brown sugar, baking soda, and cardamom or nutmeg, and stir to mix well. Add the yogurt and egg whites, and stir to mix well. Fold in the pears and raisins.
3. Coat an 8-inch square pan with nonstick cooking spray. Spread the batter evenly in the pan, and sprinkle with the topping. Bake at 350 °F for 30 to 35 minutes, or just until a wooden toothpick inserted in the center of the cake comes out clean.
4. Cool the cake to room temperature.
