2 1/2 cups sprouted chick-peas (1 cup dry)
 
3 tablespoons chopped fresh parsley
 
2/3 cup tahini (sesame butter)
 
2/3 cup water
 
1/2 cup lemon juice
 
1/2 cup olive oil
 
2 cloves garlic
 
Dash of cayenne pepper (garnish)

Directions

Place the chick-peas in a large saucepan and cover generously with water.
Bring to a boil, then reduce heat and simmer until tender, about 1/4 hours.
Place the parsley, tahini, water, lemon juice, and oil in a blender or food processor.
Add the garlic by pushing it through a garlic press into the blender.
Process on low to medium speed until smooth.
Add the cooked, drained chick-peas about a cup at a time and process until all the chick-peas are added and the mixture is smooth.
