Golden Glazed Stuffed Chicken Recipe

Ingredients

 1 (3- to 4-pound) whole broiler-fryer chicken Vegetable oil
 4 cups prepared corn bread stuffing
 1/2 cup Peach or Apricot Preserves
 Butter margarine1 Tablespoon, melted
 1 tablespoon Lemon Juice from Concentrate
 Salt To Taste
 Pepper To Taste

Directions

Preheat oven to 375°.
Brush chicken with oil; sprinkle lightly with salt and pepper.
Stuff neck and body cavities loosely with stuffing.
Place breast-side up on rack in shallow roasting pan.
Bake 1 hour and 15 minutes.
Turn remaining stuffing into greased 1-quart baking dish; bake 30 minutes.
Meanwhile, stir together preserves, margarine and lemon juice.
Spoon glaze over chicken; return to oven and bake 15 minutes longer.
Refrigerate leftovers.
