Golden Glazed Stuffed Chicken Recipe
Golden glazed stuffed chicken is a fruity chicken recipe. Prepared with peach or apricot preserves, the chicken is stuffed with corn bread stuffing and oven cooked. The fruity glaze has a hint of lemon juice to it which makes the chicken tangy and sweet on the outside!
Ingredients
| 1 (3- to 4-pound) whole broiler-fryer chicken Vegetable oil | ||
| 4 cups prepared corn bread stuffing | ||
| 1/2 cup Peach or Apricot Preserves | ||
| Butter margarine | 1 Tablespoon, melted | |
| 1 tablespoon Lemon Juice from Concentrate | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Preheat oven to 375°.
Brush chicken with oil; sprinkle lightly with salt and pepper.
Stuff neck and body cavities loosely with stuffing.
Place breast-side up on rack in shallow roasting pan.
Bake 1 hour and 15 minutes.
Turn remaining stuffing into greased 1-quart baking dish; bake 30 minutes.
Meanwhile, stir together preserves, margarine and lemon juice.
Spoon glaze over chicken; return to oven and bake 15 minutes longer.
Refrigerate leftovers.
