Directions

1. Cut each square of bean curd lengthwise into halves. Sprinkle salt over entire surface. Let stand for 10-15 minutes. Pat dry with paper towel and cut into 1/2" x 1" x 2" (1.5 cm x 2.5 cm x 5 cm) pieces.
2. Combine batter mixture in a bowl. Blend until smooth.
3. Heat 1 tablespoon oil in a skillet or non-sticking frying pan over medium high heat. Dip bean curd into batter. Fry 6-8 pieces at a time, about 2 minutes on each side or until golden brown. Remove fried bean curd and reserve.
4. Add 1 1/2 tablespoons oil to skillet and heat to medium high. Add ginger and green onion, stirring for 10-15 seconds. Return bean curd to skillet along with remaining ingredients except cornstarch solution. Cover and cook for 1 1/2-2 minutes, shaking skillet frequently to prevent bean curd from sticking.
