Golden Door Yogurt Bran Muffins Recipe

Ingredients

 
1 1/2 cups wheat bran
 
1/2 cup boiling water
 
1 1/3 cups whole wheat flour
 
1 1/4 teaspoons baking soda
 
1/2 teaspoon ground cinnamon
 
1/4 teaspoon salt
 
1/4 teaspoon ground cloves
 
1/4 teaspoon ground nutmeg
 
1 egg
 
1/3 cup honey
 
1/2. cup DANNON® Plain Nonfat or Lowfat Yogurt
 
3 tablespoons vegetable oil
 
3/4 cup fresh or frozen blueberries

Directions

Preheat oven to 350°F.
Line muffin cups with paper baking cups.
In a medium bowl combine wheat bran and boiling water; let stand 10 minutes to soften.
In a large bowl combine flour, baking soda, cinnamon, salt, cloves and nutmeg.
In a small bowl combine egg, honey, yogurt and oil; stir well.
Add to bran mixture.
Add egg mixture all at once to flour mixture; stir just until dry ingredients are moistened.
Batter will be stiff.
Fold in blueberries.
Fill prepared muffin cups 2/3 full.
Bake 20 to 25 minutes or until toothpick inserted into center comes out clean.
