Golden Crust Eggs Recipe
Ingredients
| Onion | 1 Small, chopped | |
| Butter | 2 Tablespoon | |
| 6 hard-cooked eggs | ||
| 1/4 cup pickle relish | ||
| Prepared mustard | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1 Dash | |
| Mayonnaise | ||
| Mashed potato | 4 Cup (16 tbs) | |
| Corn flakes | 1 Cup (16 tbs), crushed | |
| Butter | 1 Tablespoon | |
Directions
Saute onion in the 2 tablespoons butter until just tender.
Cut eggs in half; remove yolks and mash as for deviled eggs.
Stir in onion, relish, mustard, salt and pepper.
Blend in just enough mayonnaise to moisten.
Fill egg whites and fit halves together.
Mold the mashed potatoes around each egg, coating them about 1/2 inch thick.
Roll eggs in a mixture of corn flakes and butter.
Place side by side on a greased cooky sheet.
Bake for 20 to 25 minutes at 350F.
