Golden Beef Hash Recipe
Ingredients
1 medium-size all-purpose potato, peeled and diced
1 medium-size size parsnip, peeled and diced
8 ounces cooked beef round or chuck, diced
1 medium-size yellow onion, finely chopped
1/4 cup minced parsley
2 teaspoons Worcestershire sauce
1/2 teaspoon black pepper
1/4 teaspoon salt
2 teaspoons vegetable oil
1 tablespoon grated Parmesan cheese
Directions
1 ln a medium-size saucepan of boiling water, cook the potato and parsnip for 10 minutes or until tender; drain and transfer to a large bowl.
Add the beef, onion, parsley, Worcestershire sauce, pepper, and salt and mix well.
2 In a 10 inch nonstick skillet, heat the oil over moderate heat.
Add the beef mixture and flatten it evenly with a spatula.
Lower the heat and cook, uncovered, for 1 5 minutes or until the edges are golden brown.
3 Preheat the broiler, setting the rack 6 inches from the heat.
Sprinkle the top of the hash with the cheese.
Wrap the handle of the skillet with heavy-duty aluminum foil and run the hash under the broiler for 2 minutes or until the top is golden and crisp.
