Ingredients

 
3 cups flour
 
4 teaspoons baking powder
 
1 teaspoon each ground allspice and cinnamon
 
1/2 teaspoon salt
 
2 cups vegetable oil
 
1 1/2 cups packed brown sugar
 
2 cups grated Golden Delicious apples
 
1 cup prepared mincemeat
 
1/2 cup chopped pecans
 
1 1/2 teaspoons vanilla
 
3 eggs
 
1 to 2 tablespoons sifted powdered sugar
 
Hard Sauce

Directions

Preheat oven to 350°F.
Combine flour, baking powder, allspice, cinnamon and salt in large bowl; set aside.
In large bowl of electric mixer, combine oil and brown sugar; beat well.
Add half the flour mixture; mix well.
Blend in grated apples, mincemeat, pecans and vanilla.
Add remaining flour mixture.
Add eggs, 1 at a time; beat well after each addition.
Turn into greased 10-inch Bundt pan.
Bake 1 hour or until wooden toothpick inserted near center comes out clean.
Cool in pan 15 minutes; turn out onto wire rack.
When cool, sprinkle with powdered sugar.
If desired, cake can be served slightly warm with Hard Sauce.
