Ingredients
14 cup whole wheat pastry flour
2 tablespoons grated pecorino or Parmesan cheese
1/2 teaspoon freshly ground white pepper
8 ounces sole fillets
2 eggs, lightly beaten
2 tablespoons butter
1 lemon, juiced plus peel cut into strips
1 teaspoon capers
Directions
Blend flour, cheese, and pepper.
Rinse sole, pat dry.
Lightly dredge sole on both sides in flour mixture, then in egg.
In a frying pan, heat 2 tablespoons butter over medium heat until foamy.
Add sole, cooking one fillet at a time for 2 to 3 minutes on each side; transfer to warm plates.
When sole is cooked, add remaining butter to pan, heat until foamy with 3 strips of lemon peel and capers.
Add lemon juice to taste.
Remove and discard peel.
Pour sauce over fish, and serve at once.
