Goat Cheese Quesadillas With Green Chile Salsa Recipe
Ingredients
| Goat cheese package | 1 , softened | |
| Monterey jack cheese | 1 Cup (16 tbs) | |
| Cilantro | 1/4 Cup (16 tbs), chopped | |
| Chili powder | 1 Tablespoon | |
| Red beans | 1 Can (10oz), drained, rinsed | |
| 8 (8-inch) fat-free flour tortillas | ||
| Cooking spray | ||
| Green-Chile Salsa | ||
Directions
Preheat oven to 350°.
Combine first 5 ingredients in a bowl; stir well.
Spread about 3/4 cup cheese mixture over each of 4 tortillas, leaving a 1/2-inch border.
Top each with a tortilla, pressing gently.
Place quesadillas on a large baking sheet coated with cooking spray; cover with foil.
Bake at 350° for 25 minutes or until cheese melts.
Cut each quesadilla into 4 wedges, if desired.
