Gnocchi with Herb Sauce Recipe
Ingredients
| 750 g/l 1/2 lb potato gnocchi | ||
| FRESH HERB SAUCE | ||
| 4 tablespoons roughly chopped fresh parsley | ||
| Coriander | 4 Tablespoon, chopped | |
| Basil | 4 Tablespoon, chopped | |
| Pine nuts | 2 Tablespoon | |
| Parmesan cheese | 1 Tablespoon, grated | |
| 1 tablespoon reduced-fat mayonnaise | ||
| Vegetable stock | 1 Tablespoon | |
| black pepper | 1 | |
Directions
1. Cook gnocchi in a large saucepan of boiling water following packet directions. Drain and keep warm.
2. To make sauce, place parsley, coriander, basil, pine nuts and parmesan cheese in a food processor or blender and process until combined. Add mayonnaise, stock and black pepper to taste and process until combined.
