Gnocchi Recipe
Ingredients
1 lb. white potatoes
2 tbsp. butter
1 egg yolk
Approx. 1 cup flour
Directions
Boil until potatoes are cooked, approx 30-45 minutes.
Peel and puree until the lumps disappear.
Melt butter in saucepan and add mashed potatoes and stir vigorously.
Add and stir quickly so egg cannot cook.
Remove from stove.
Place mixture on floured counter.
Add slowly to potato mixture and knead as if bread for approx 5 minutes.
Add enough flour so that dough is not sticky.
Divide dough into 4 pieces.
Roll each out to 1/2" diameter and cut into 1/2" pieces.
Place in large pot of boiling water for approx 4 minutes.
