Glorified Egg Shortcake Recipe
Ingredients
| Butter | 2 Tablespoon | |
| Flour | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Milk | 1 Cup (16 tbs) | |
| 2 tsp. chopped onions or chives | ||
| 1 tbsp. chopped pimiento, if desired | ||
| Celery | 1/3 Cup (16 tbs), thinly sliced | |
| 1/3 cup cooked or canned green peas | ||
| 3 hard-cooked eggs, quartered | ||
| Rolled Biscuits | ||
| 2 to 3 tbsp. grated American or Cheddar cheese | ||
Directions
Melt butter; blend in flour, salt, and pepper.
Cook over low heat, stirring until mixture is smooth; remove from heat.
Slowly stir in milk.
Bring to a boil over direct heat, stirring constantly.
Boil 1 min.
Just before serving, stir in rest of ingredients except Biscuits and cheese.
Bring mixture just to a boil.
