Glistening Green Gelatin Recipe
The glistening green gelatin is a vegetable gelatin. Prepared with a medley of fresh veggies flavored with vinegar and lemon juice, the glistening green gelatin is served as a mold and can be served between the courses at a dinner or lunch.
Ingredients
| 1 env. gelatin, unflavored | ||
| Sugar | 1 Teaspoon | |
| Water | 1 3/4 Cup (16 tbs) | |
| Vinegar | 3 Teaspoon | |
| Lemon juice | 1 Teaspoon | |
| Green onions | 6 , chopped | |
| 2 cup spinach, raw, shredded | ||
| Celery | 1 Cup (16 tbs), chopped | |
| 1 cup carrot, coarsely grated | ||
| Green pepper | 1 Teaspoon, minced | |
Directions
1. Combine gelatin and sugar in saucepan. Add 3/4 cup water. Heat, stirring constantly, until gelatin is dissolved. Remove from heat.
2. Stir in remaining water, vinegar, and lemon juice.
3. Chill mixture until partially set. Then fold in remaining ingredients.
4. Pour into a 1 quart mold or 7 individual molds. Chill until firm.
