Glenwood Plantation Oyster Shrimp And Crab Recipe
Ingredients
| Oysters | 2 Dozen | |
| Crabs | 1/2 Dozen, cut in half | |
| Shrimp | 1 Pound, scalded | |
| Onions | 2 | |
| Ham slice | 1 | |
| Tomatoes | 6 | |
| Water | 3 Quart | |
| Okra | 1 Pint | |
| Bay Leaf | 1 | |
| 1 pod red pepper | ||
| Thyme Sprig | 1 Small | |
| Parsley sprigs | 1 | |
| Lard | 1 Tablespoon | |
| Salt, pepper | ||
Directions
Chop onions fine, peel tomatoes, chop and save juice; chop red pepper, parsley, and thyme.
Wash okra, stem and slice thin; cut ham in squares.
Put lard to melt in a soup pot; add chopped onions and ham, the sliced okra.
When well browned, add tomatoes with juice; cook until tender.
Then add oysters, shrimp and crabs (which have been prepared).
Add red pepper, bay leaf, parsley, and thyme.
When everything is well fried and browned, add 3 quarts of water.
Let simmer gently 1 hour or longer.
Season to taste with salt and pepper.
