Ingredients

 Vegetable oil2 Teaspoon
 Root ginger1 Tablespoon, chopped
 1 lb carrots, sliced on diagonal 500 g
 1 lb Brussels sprouts, trimmed and halved 500 g
 Maple syrup2 Tablespoon
 1 cup homemade chicken stock, or water 250 mL
 Salt1/2 Teaspoon
 Pepper1/4 Teaspoon

Directions

Heat oil in large non-stick skillet.
Add ginger and cook gently for a few minutes until very fragrant.
Add carrots and Brussels sprouts.
Drizzle with maple syrup and turn to coat well.
Add chicken stock, salt and pepper.
Bring to boil and cook, uncovered, until liquid evaporates and vegetables are glazed.
