2 1/2 cups fresh peach slices
 
1 tablespoon lemon juice
 
1/4 cup sugar
 
1/2 cup sugar
 
3 tablespoons cornstarch
 
2 tablespoons butter or margarine
 
1/8 teaspoon salt
 
1/8 teaspoon almond extract
 
1 baked 8 in. pie shell

Directions

Turn peach slices into a bowl.
Drizzle lemon juice over them and mix lightly.
Add 1/4 cup sugar and toss gently.
Set aside 1 hour.
Drain peaches, reserving syrup in a 1-cup measuring cup for liquids.
Add enough water to syrup to measure 1 cup liquid.
Combine the 1/2 cup sugar and cornstarch in a saucepan.
Stir in the reserved peach liquid until thoroughly blended.
Stirring constantly, bring mixture to boiling; boil 3 minutes, or until thick and clear.
Remove from heat.
Blend in the butter, salt, and extract.
Add the peach slices and mix gently.
Turn into baked pie shell; cool.
If desired, serve with whipped cream.
