Rich Glazed Ham With Hot Cider Sauce Recipe

1 cooked ham, bone-in (8 lb/4 kg) 1
2-1/2 cups cider or apple juice 625 mL
1 cup packed brown sugar 250 mL
1 tsp ground cloves 5 mL
1 tsp cinnamon 5mL
Rind and juice of 1 lemon
1 cup sultana raisins 250 mL
1 tsp dry mustard 5 mL
1 tbsp cornstarch 15 mL
2 tbsp cold water 25 mL
Directions
Remove all but 1/4-inch (5 mm) fat from ham; place, fat side up, in roasting pan.
Combine cider, 1/2 cup (125 mL) brown sugar, cloves, cinnamon, and lemon rind and juice; pour over ham.
Cover and bake in 325°F (160°C) oven, basting frequency, for 1-1/2 hours.
Add raisins; bake for 30 minutes longer.
Combine remaining 1/2 cup (125 mL) sugar with mustard; press onto ham.
Bake, uncovered, for about 30 minutes longer or until glaze is set.
Remove ham to heated platter.
Skim off fat in pan.
Stir in cornstarch with water; blend into pan juices and cook, stirring, until thickened.
Serve with ham.
