Glazed Turkey Cutlets Recipe

Ingredients
1/2 teaspoon crushed fresh garlic
4 turkey breast cutlets, 2 ounces each
1 recipe Broccoli-Rice Pilaf, prepared
GLAZE
2 tablespoons apricot preserves or fruit spread
2 tablespoons orange juice
1 1/2 tablespoons seasoned rice vinegar
1 teaspoon cornstarch
3/4 teaspoon fresh rosemary, or 1/4 teaspoon dried
Directions
1. Combine the glaze ingredients in a small bowl, and stir until the cornstarch is dissolved. Set aside.
2. Coat a large nonstick skillet with cooking spray, and preheat the skillet over medium-high heat. Place the garlic and the turkey cutlets in the skillet, and brown for 2 minutes on each side, or until the meat is no longer pink inside. Transfer the cutlets to a plate and keep warm.
3. Place the skillet over low heat. Stir the glaze mixture, and pour it into the skillet. Cook, stirring constantly, for 30 to 60 seconds, or until the glaze is thickened and bubbly. Add the turkey cutlets to the skillet, and turn them in the glaze until completely coated. Remove the skillet from the heat.
4. Place 1 1/4 cups of Broccoli-Rice Pilaf on each of 2 dinner plates. Arrange half of the turkey cutlets over each mound of pilaf.
