Glazed Sweet Potatoes With Pears Recipe
Ingredients
| 4-5 sweet potatoes (about 1 1/2 pounds total), peeled and cut into 1" cubes | ||
| Butter/Margarine | 1 Tablespoon | |
| Orange juice | 1/2 Cup (16 tbs) | |
| 2 large pears, cut crosswise into 1/2" slices | ||
| Walnuts | 1/4 Cup (16 tbs), chopped | |
| Water | 1/4 Cup (16 tbs) | |
| Maple syrup | 2 Tablespoon | |
| Cornstarch | 1 Tablespoon | |
| Ground cinnamon | 1/2 Teaspoon | |
Directions
In a 2-quart casserole, combine the sweet potatoes, margarine or butter, and 1/4 cup of the juice.
Cover with a lid and microwave on high for 6 minutes.
Stir, cover, and microwave on high for 4 to 6 minutes, or until crisp-tender.
Add the pears.
Cover with a lid and microwave on high for 2 to 4 minutes, or until the fruit is tender but still holds its shape.
Stir in the walnuts.
Cover and let stand.
In a 1-cup glass measure, combine the water, maple syrup, cornstarch, cinnamon, and remaining 1/4 cup orange juice.
Microwave on high for 1 minute.
Stir and microwave on high for 1 to 2 minutes, or until the mixture comes to a boil and thickens.
Pour over the sweet potato mixture and toss gently to coat.
