Glazed Shrimp Kabobs Recipe
Ingredients
| Raw large shrimp- 1 pound, 14-16 per pound | ||
| Lime or lemon wedges- 12 | ||
| Apricot preserves | 1/4 Cup (16 tbs) | |
| Orange juice | 1/4 Cup (16 tbs) | |
| Lemon juice | 1/4 Cup (16 tbs) | |
| Honey | 2 Tablespoon | |
| Cornstarch | 2 Tablespoon | |
| Hot pepper sauce | 2 Drop | |
| Dried mint | 1/2 Teaspoon | |
| Skewers- 4 | ||
Directions
GETTING READY
1. Thaw shrimp if frozen
2. Peel raw shrimp leaving tails on
3. Remove sand veins and wash
MAKING
4. Thread the following on metal or bamboo skewers which have been soaked a few minutes in water, a lime or lemon wedges, 2 shrimp, and another citrus wedge
5. Cover the tails of the shrimp with aluminium foil
6. Place kabobs on a tray, cover and refrigerate until ready to cook
7. To prepare glaze, combine preserves, orange and lemon juice, honey, cornstarch, and hot pepper sauce , stir until no cornstarch lumps remain
8. Cook, stirring constanting until mixture thickens slightly
Simmer 3 to 4 minutes
9. To broil kabobs place on well-greased broiler pan, brush with sauce and sprinkle with mint
10. Broil about 4 inches from source of heat for 5 minutes, then
turn, brush with sauce and sprinkle with mint
11. Broil 4 to 5 minutes longer or until shrimp turns pink and is lightly browned
12. Remove foil from tails
