Glazed Rock Cornish Hen Tia Maria Recipe

Ingredients
1 Cornish hen, approx. 24 oz.
1 tsp. mixed salt & pepper
6 tbsp. Fleischmann's Margarine
2 tbsp. sugar
1 cup brown sauce OR 1 cup canned gravy
4 oz. red wine
3 oz. Tia Maria
Juice of 1 lime
Rice mixed with chopped ham
Directions
Pre heat oven to 350°.
Mix salt and pepper together and sprinkle all of it over hen and put a dash inside.
Put a few drops of Tia Maria over and inside hen and roast in a pan for 20 mins. at 350°.
Remove hen from oven and transfer to a side plate.
Add the Fleischmann's Margarine to pan and stir in sugar until Margarine and sugar have melted.
Add the wine, brown sauce, simmer for 2 mins.
Add the Tia Maria and lime juice, and stir well.
Quarter the hen and place pieces on steamed rice mixed with diced ham.
Pour sauce over.
