Ingredients

 Pork loin roast3 Pound
 Salt1 Dash
 Vegetable oil1 Tablespoon
 Garlic2 Clove (5gm)
 Peaches3 Medium, blanched
 Dry sherry6 Fluid Ounce
 Reduced-calorie apricot spread - 1/4 cup (16 calories per 2 teaspoons)
 Teriyaki sauce1 Tablespoon
 Granulated Sugar1 Tablespoon

Directions

MAKING
1 On a rack in a roasting pan, place the pork loin and sprinkle with salt.
2 Insert meat thermometer into center of roast, being careful thermometer does not touch bone.
3 Roast the meat at 325°Fahrenheit,for about 1 1/2 hours until the thermometer registers 170°Fahrnheit.
4 Remove the pan from the oven.
5 In a 1-quart saucepan, heat the oil.
6 Add garlic and saute lightly.
7 Add the remining ingredients and gradually bring to a boil.
8 Lower the heat and simmer for about 5 minutes, until the sauce thickens.
9 Spread the mixture evenly on the pork and return to the oven.
10 Roast for about 5 minutes, until the pork is glazed and the sauce is bubbly.

SERVING
11 Serve hot.
