Glazed Pork Kabobs Recipe
Ingredients
1/2 cup apricot preserves
1/2 of an 8 ounce can tomato sauce
1/4 cup packed brown sugar
1/4 cup dry red wine
2 tablespoons lemon juice
2 tablespoons cooking oil
1 teaspoon onion juice
1 1/2 pounds lean boneless pork, cut in 1 inch pieces
4 large carrots, cut in 1 inch pieces and cooked
Fresh pineapple chunks
Directions
Combine first 7 ingredients.
Cook, uncovered, 10 to 15 minutes; stir occasionally.
Thread pork, carrots, and pineapple on 6 skewers; season with salt and pepper.
Grill over medium coals 10 minutes; turn frequently.
Brush with sauce; grill 5 minutes more.
