Glazed Lime Loaf Recipe

| Baking powder | 1 Tablespoon | |
| Baking soda | 1/4 Teaspoon | |
| Lime juice | 2 Tablespoon | |
Directions
In a small mixing bowl combine egg, milk, oil, lime peel, and 1/4 cup lime juice.
In large mixing bowl stir together flour, % cup of the sugar, the baking powder, baking soda, and 1 teaspoon salt.
Make a well in the center.
Add egg mixture all at once.
Stir just till moistened (batter should be lumpy).
Turn batter into greased 9x5x3-inch loaf pan.
Bake in 350° oven for 1 hour.
Cool in pan 10 minutes; remove from pan onto wire rack.
Prick holes in hot loaf with a fork.
In saucepan combine remaining 1/4 cup sugar and the 2 tablespoons lime juice; heat just till sugar dissolves.
Spoon over top of hot loaf.
Cool completely.
