Glazed Lemon Squares Recipe
Ingredients
| Self-raising flour - 8 oz (250 g) | ||
| Baking powder | 1 1/2 Teaspoon | |
| Caster sugar | 6 Ounce | |
| Soft margarine | 6 Ounce | |
| Eggs - 3, size 3, | ||
| Rind of lemons - 2, grated | ||
| Milk | 4 Tablespoon | |
| Juice of lemons - 2 | ||
| Granulated Sugar | 4 Ounce | |
Directions
GETTING READY
1 Preheat the oven at 350 degrees farenheit/180 degrees celsius.
2 Grease a 7" x 11" (18 x 28 cm) shallow cake tin.
MAKING
3 In a bowl, sift the flour and baking powder.
4 Add the sugar, margarine, eggs, lemon rind and milk.
5 Using a wooden spoon or beater, mix well.
6 Then beat the ingredients together until smooth.
7 Spoon the mixture into the prepared tin and spread level.
8 Bake for 40 minutes until firm to touch.
9 Heat the lemon juice and sugar until it dissolves.
10 When the cake is cooked, remove from the oven and spoon the warm glaze over the top.
11 Leave until cold.
SERVING
12 Serve cut in squares with a little sugar sprinkled on top.
