Ingredients

 
1 pound ground smoked ham
 
1 large carrot, grated
 
1 small onion, minced
 
1 cup fresh bread crumbs (2 slices)
 
2 teaspoons prepared mustard 2 eggs
 
1 8-ounce can pineapple slices in juice
 
2 tablespoons light-brown sugar
 
2 teaspoons cornstarch
 
1 tablespoon butter or margarine
 
1 tablespoon lemon juice

Directions

1. Grease 12" by 8" baking pan. In medium-sized bowl, mix first 6 ingredients. In pan, shape ham mixture into 7" by 3" loaf. Bake in 350°F. oven 30 minutes.
2. Meanwhile, into 1-quart saucepan, drain juice from pineapple slices; reserve slices. Into juice in saucepan, stir brown sugar and cornstarch; cook over medium heat, stirring constantly, until mixture thickens and boils; boil 1 minute. Remove from heat; stir in butter or margarine and lemon juice until blended.
3. Remove ham loaf from oven. With pastry brush, brush loaf with pineapple glaze.
4. Overlap reserved pineapple slices on top of loaf. Bake 30 minutes longer, brushing occasionally with glaze. Let loaf stand 5 minutes for easier slicing.
