| 3 cups ground cooked ham or smoked pork shoulder | ||
| Oats | 3/4 Cup (16 tbs), uncooked | |
| 2 eggs, slightly beaten | ||
| Milk | 1/2 Cup (16 tbs) | |
| Packed brown sugar | 2/3 Cup (16 tbs) | |
| Flour | 2 Tablespoon | |
| Dry mustard | 1 Teaspoon | |
| Ground cloves | 1/8 Teaspoon | |
| 3/4 cup apricot nectar or syrup drained from canned fruit such as apricots, peaches, or pears | ||
| Vinegar | 2 Tablespoon | |
Directions
1. Combine ground ham, oats, eggs, and milk in bowl, mixing until thoroughly blended.
2. Shape into loaf in a 9 x 5 x 3 inch loaf pan.
3. Bake in 325°F oven 1 hour. Pour excess fat from pan.
4. Blend brown sugar, flour, dry mustard, and cloves in a saucepan. Add nectar and vinegar; stir and cook over low heat until thickened. Pour over ham loaf and continue baking 20 minutes.
