Glazed Chicken & Orange Salsa Recipe
Ingredients
| 2 medium seedless oranges, segmented, membrane removed, chopped | ||
| Sugar | 1 Tablespoon (SALSA:) | |
| Green onions | 2 Tablespoon, sliced (SALSA:) | |
| Parsley | 2 Tablespoon, chopped (SALSA:) | |
| 2 (12 ounces each) whole boneless chicken breasts, skinned, halved | ||
| Salt | 1/8 Teaspoon (SALSA:) | |
| Pepper | 1/8 Teaspoon (SALSA:) | |
| Butter | 3 Tablespoon, melted (GLAZE:) | |
| Orange juice | 1 Cup (16 tbs) (GLAZE:) | |
| Cornstarch | 1 Tablespoon (GLAZE:) | |
Directions
In small bowl stir together all orange salsa ingredients; refrigerate at least one hour.
Prepare grill; heat until coals are ash white.
In 1-quart saucepan stir together all glaze ingredients.
Cook over medium heat, stirring constantly, until mixture thickens and comes to a full boil, about 5-7 minutes.
Sprinkle chicken breasts with salt and pepper.
Place chicken on grill; brush with glaze.
Grill, turning once and brushing with glaze, until chicken is fork tender, about 10-12 minutes.
