Glazed Avocado Boats Recipe
Glazed avocado boats is a fruit dessert made with mixed fruits and gelatin. Prepared with syrup and chilled with mixed fruits and celery, the glazed avocado boats are served in avocado cavities or halves.
Ingredients
| Pineapple tidbits | 1 8 3/4 Ounce | |
| 1 teaspoon unfavored gelatin | ||
| Sugar | 1 Tablespoon | |
| 1/4 teaspoon grated lime peel | ||
| Lime juice | 1 Tablespoon | |
| 1 medium unpared apple, diced | ||
| 1 orange, pared and diced | ||
| Celery | 1/2 Cup (16 tbs), diced | |
| Avocados | 3 Medium | |
Directions
Drain pineapple, reserving syrup.
Combine gelatin, sugar, and dash salt.
Heat syrup and 1/2 cup water to boiling; add to gelatin mixture and stir till gelatin and sugar are dissolved.
Stir in lime peel and juice.
Chill till partially set.
Combine pineapple tidbits, apple, orange, and celery.
Halve avocados lengthwise; remove seeds and skin.
Place one half on each of 6 lettuce-lined luncheon plates.
Spoon fruit into cavities.
Drizzle gelatin over.
Combine gelatin, sugar, and dash salt.
Heat syrup and 1/2 cup water to boiling; add to gelatin mixture and stir till gelatin and sugar are dissolved.
Stir in lime peel and juice.
