Ingredients

 
1 pound ground meat, lamb, or beef
 
Salt and pepper
 
Parsley, finely chopped
 
1 small onion, grated
 
Meat stock
 
1/4 cup raw rice
 
1 egg
 
Mint, chopped, to taste

Directions

Combine meat, onion, rice, mint, and salt and pepper to taste and form tiny, marble size meatballs.
Roll in chopped parsley and drop into simmering stock.
Cook until meat is tender, approximately 35 minutes.
If desired, the ground meat may be moistened with 1 egg beaten with a little water.
