Ingredients
4 pounds pork loin country-style ribs
Water
1 17-ounce can apricot halves, drained
1/3 cup packed brown sugar
3 tablespoons cider vinegar
3/4 teaspoon salt
3/4 teaspoon ground ginger
Directions
1. In 5-quart saucepot or Dutch oven over high heat, heat country-style ribs and enough water to cover to boiling. Reduce heat to low; cover and simmer 1 hour or until ribs are fork-tender. Remove to platter; cover; refrigerate.
2. About 1 hour before serving, prepare outdoor grill for barbecuing.
3. In blender at medium speed or in food processor with knife blade attached, blend apricots, sugar, vinegar, salt, and ginger until smooth.
4. Place ribs on grill over medium heat; cook 20 minutes or until heated through, turning ribs and brushing with apricot mixture often.
