Gingered Papaya Sundaes Recipe
Ingredients
| 1 firm-ripe papaya | ||
| 2 or 3 large limes | ||
| Butter/Margarine | 2 Tablespoon | |
| 2 tablespoons thinly slivered candied or | ||
| Crystallized ginger | ||
| Firmly packed brown sugar | 1 Tablespoon | |
| Vanilla Ice Cream | 1 Pint | |
Directions
Peel papaya and cut in half lengthwise; scoop out seeds.
Cut papaya halves crosswise into Vi-inch-thick slices.
Pare a strip or two of peel colored part only from one lime; cut into enough thin slivers to make 1/2 teaspoon or remove peel with a zesting tool.
Squeeze enough fruit to make 2 tablespoons juice.
Cut remaining lime into thin slices; set aside.
Melt butter in a wide frying pan over medium heat.
Add papaya, ginger, and sugar.
Cook until hot, gently turning papaya slices 2 to 4 minutes.
Stir in lime peel and lime juice.
Spoon papaya mixture into 4 shallow dessert bowls and moisten with pan juices.
Top each portion with a scoop of ice cream and a few lime slices.
