Gingered Carrots Recipe

Ingredients
1 bunch green onions, chopped, white and green parts separated
1 lb (4355 g) carrots, peeled and sliced
2 tbs (30 ml) Ginger Tamari Soy Sauce
1/2 cup (120 ml) chicken broth
2 tsp (10 ml) cornstarch mixed with
1 tbs (15 ml) water
Directions
Trim root ends off green onions.
Slice into 1/4-inch pieces.
Microwave carrots on high with 2 tbs water in a covered microwave dish for about 6 minutes or until carrots are crisp-tender; drain off excess water.
Heat skillet.
Add ginger tamari soy sauce and white part of green onions; stir-fry 1 minute.
Reduce heat and add carrots and chicken broth: cover and simmer until carrots are completely cooked.
Thicken with cornstarch/water mixture.
Garnish with onion tops.
