Gingerbread Muffins Recipe

Ingredients
1 Beaten Egg
1/2 Cup Sugar
1/2 Cup Light Molasses
1/4 Cup Salad Oil
1 Cup Flour
1/4 Tsp. Salt
1/2 Tsp. Soda
1/2 Tsp. Ginger
1/4 Tsp. Nutmeg
1/4 Tsp. Cinnamon
1/2 Cup Boiling Water
1/2 Cup Chopped Walnuts (Optional)
Directions
Combine egg, sugar, molasses and oil.
Beat well.
In another bowl, mix flour, salt, soda and spices.
Combine with egg mixture, then add water.
Fold in nuts if desired.
Fill greased muffin tins two-thirds full and bake until done.
Bake at 350 degrees 20 minutes
