Ingredients

 
3 tablespoons sugar
 
1/4 cup molasses
 
1/2 cup corn syrup
 
3 tablespoons shortening
 
1 teaspoon ginger
 
1/2 teaspoon cinnamon
 
Pinch of salt
 
1/2 cup boiling water
 
1 teaspoon soda
 
1 1/2 cups sifted flour
 
1 egg, well beaten
 
1 9-inch unbaked pie shell
 
2 egg whites
 
4 tablespoons sugar

Directions

Combine 3 tablespoons sugar, molasses, corn syrup, shorten- ing, ginger, cinnamon and salt.
Combine water and soda and add to molasses mixture.
Stir in flour.
Beat together with rotary beater.
Add egg, and beat again.
Pour into shell.
Bake in a moderate oven (375° F) until firm, about 40 minutes.
Beat egg whites until stiff but not dry.
Gradually beat in 4 tablespoons sugar until mixture stands in peaks.
Cover pie with meringue and bake in a hot oven (425° F) 5 to 10 minutes or until browned.
Makes one 9-inch pie.
