Gingerbread Squares Recipe
Ingredients
| Butter | 2 Tablespoon, softened | |
| Honey | 2 Tablespoon | |
| Molasses | 1 Tablespoon | |
| Eggs | 2 | |
| Skim milk | 1/4 Cup (16 tbs) | |
| Whole wheat pastry flour | 1 Cup (16 tbs) | |
| Baking powder | 1/2 Teaspoon | |
| Ground ginger | 1 Teaspoon | |
| Ground cinnamon | 1 Teaspoon | |
| Ground nutmeg | 1/4 Teaspoon | |
| Raisins - 1/4 cup, plumped | ||
Directions
GETTING READY
1) Preheat the oven to 350°F.
2) In a 8 x 8-inch pan, spray with a vegetable spray.
MAKING
3) In a large bowl, cream the butter, honey and molasses together.
4) Beat in the eggs and skim milk, blend thoroughly.
5) In a medium bowl, whisk the flour, baking powder, ginger, cinnamon, and nutmeg together.
6) Drain the raisins and toss them with 1 tablespoon of flour mixture.
7) Stir rest of the flour mixture into the egg mixture and fold in raisins.
8) Spread the batter in the prepared pan and bake on middle shelf of the preheated oven for 15 minutes.
9) Slice into 9 squares and allow to cool on a wire rack.
SERVING
10) Serve the Gingerbread Squares on a serving platter.
