Ingredients

 
1/2 cup water
 
1 cup molasses
 
1/4 cup vegetable oil
 
2 tablespoons sugar
 
1 teaspoon baking soda
 
1/4 teaspoon salt
 
1 1/2 teaspoons ground ginger
 
1/4 teaspoon ground nutmeg
 
2 cups all-purpose flour
 
Lemon Sauce

Directions

1. Line an 8-inch square glass baking dish with 2 layers of paper towels cut to fit. Set aside.
2. Combine water, molasses and oil in a 2-quart glass measuring pitcher. Cook uncovered in microwave oven 3 minutes at High, or until boiling.
3. Blend sugar, baking soda, salt, ginger and nutmeg; stir into molasses mixture. Blend in flour, 1/2 cup at a time, stirring until smooth after each addition. Pour into the lined dish and spread evenly. Shield each corner of dish with a small piece of aluminum foil.
4. Cook uncovered in microwave oven 7 to 9 minutes at Medium-High;
rotate dish one-quarter turn halfway through cooking period.
5. Remove foil. Let stand 10 minutes. Loosen edges of cake from dish. Invert onto a rack; discard paper.
