Ginger Plum Dessert Recipe

Ingredients
1/2 kg plums
3-4 tablespoons water
2 tablespoons ground sugar
2 teaspoons crystallised ginger chopped fine
1/2 tablespoon gelatine
2 tablespoons water
3/4 cup cream
1 1/4 cup cream
2 tablespoons raisins
2 egg whites
pinch of cream of tartar (optional)
Directions
Halve the plums and remove the stones.
Place the plums with the water in the pan and simmer till soft.
This should take about 10 minutes.
Puree the fruit.
Stir in the sugar and ginger if you're using it.
Meanwhile, sprinkle the gelatine over the water and leave till it becomes spongy; then dissolve.
Pour the gelatine into the plum mixture, stir well and refrigerate till beginning to thicken.
Whip the cream till thick and fold into the plum mixture with raisins.
Whip the whites stiff with the cream of tartar and fold in two into the plums.
Pour into a serving bowl or individual glasses and leave to set in the refrigerator.
